What a fantastic experience we had last night at Bounty & Soul’s ‘Farm to Fork’ event! It was a beautiful evening filled with amazing people, live music, and spectacular food with a gorgeous backdrop of mountain magic! Chef Peter Pollay served up a delicious Roasted Baby Pumpkin Salad with fresh vegetables from Lee’s One Fortune Farm and the Madras spice from Spicewalla.
The roasted baby pumpkin salad is a spice-forward salad with bitter melon, pumpkin vines, water spinach, mustard greens, shiso, hazelnuts, goat cheese, smoked pumpkin vinaigrette, pumpkin flowers and Madras curry spice from Spicewalla.
