ASHEVILLE – To build an award-winning wine collection, several key factors are considered at downtown contemporary American restaurant Posana.
The restaurant’s wine cellar contains more than 450 varieties of wine spanning styles, regions and prices, said Cara De Lavallade, Posana’s assistant general manager and advanced sommelier.
“All of it comes down to our guests and what the guests are excited about and what they value and what they want to see and enjoy when they come to the restaurant,” she said. “When I build a list, I’m building a list for as many people as possible. That’s why you find such a wide variety of styles and price points and regions on the list.”
The in-depth approach has won over Posana’s diners as well as the judges of a prestigious international award program since 2014.
