Recipe Friday: Gluten-Free Buttermilk Biscuits

It’s Recipe Friday! What do you think about gluten-free buttermilk biscuits?

Posana’s Buttermilk Biscuits
makes 24 biscuits

9 cups sorghum blend
3 cups tapioca flour
2 T baking powder
3 T xanthan gum
2 T guar gum
2 T salt
1 cup sugar

24 oz. cold butter, cubed
8 eggs
2 1/2 cups buttermilk

In a large mixer, combine dry ingredients.
Cut in butter.
In separate bowl, combine eggs and buttermilk.
Add egg mixture to flour mixture.

Bake at 400 degrees for 20 minutes. Brush with butter.
