 Posana Asheville Lobster Mac and Cheese

It’s Recipe Friday! Treat yourself to the perfect comfort dish: lobster mac and cheese!

Posana’s Lobster Mac and Cheese

8 oz. Lobster Claw Meat

1/2 cup Shallots

1/2 cup White Wine

2 cups Heavy Cream

1 cup Aged White Cheddar Cheese

4 oz. package Chives

12 oz. Ricotta Gnocchi


  • In a stainless steal pot cook shallots in a small amount of canola oil over medium heat for 5 minutes
  • De-glaze pan with white wine, reduce by half
  • Add heavy cream, bring to a boil, reduce heat and simmer until reduced by half
  • With the heat set to low, whisk in cheddar cheese and continue to whisk until cheese is completely melted and the  sauce consistency coats the back of a spoon
  • Taste and season with salt and peper
  • Brown gnocchi in a nonstick pan
  • Add lobster and chives
  • Serves 4, garnish with chives
