Perhaps it’s the invigorating Blue Ridge Mountains backdrop, but Asheville has emerged as one of the country’s earthiest epicenters. Teeming with massage therapists and boutiques hawking incense and colorful crafts, this contemporary hippie haven in western North Carolina is also celebrated for wholesome, farm-fresh cooking. Numerous locals embrace herbal remedies as a daily ritual, so it’s not surprising, then, that many are settling into the bar of Posana Restaurant to relish a ginseng cocktail before ordering their grilled Georgia quail and cauliflower steak.
